All of the recipes listed in the Meal Plans are displayed below. Unless otherwise stated, each recipe serves 1. Individual ingredients may be substituted for similar items or vegetarian options to suit individual taste or specific dietary preferences.
Kim Kardashian’s Meal Replacement Shakes
The shake powder should be blended with 200ml ice cold water. This can be done by hand, in a blender or with a shaker. The shake should be consumed immediately once mixed. Although this is the suggested way to blend the shakes, they are a versatile product and may be used in other ways as detailed below:
Additional calories should be taken into account when preparing the shakes in alternative ways.
You will need:
190g diced lean casserole beef
¼ Tbsp olive oil
¼ onion, sliced
½ tsp crushed garlic
¼ Tbsp ground cumin
¼ Tbsp ground coriander
¼ Tbsp ground turmeric
Pinch ground cinnamon
1 Tbsp cup raisins or sultanas
2 Tbsp chopped fresh apricots
2 Tbsp beef stock
Method:
• Heat a little oil in a deep-sided pan on high and fry onion until browned
• Remove and put aside
• Heat a little more oil on high and brown beef in small batches, removing each batch before adding the next
• Return onion to pan
• Add remaining ingredients, stirring to combine
• Reduce to a low heat, cover and simmer (cooking to a level where tiny bubbles rise to the surface) until fork tender, this will take about 1 ½ to 2 hours
• Stir occasionally and season to taste
• If casserole needs thickening, boil with lid off for 10-15 minutes
You will need:
125 g lean minced beef
½ tsp sunflower or vegetable oil
¼ onion, finely chopped
¼ tsp crushed garlic
½ Tbsp tomato paste
100 g tinned tomatoes, with juice
¼ tsp sugar
72g canned red kidney beans, drained
A pinch of mexican chilli powder, or to taste
¼ Tbsp chopped parsley
Method:
• Heat oil on high and fry onion and garlic for 1-2 minutes.
• Add mince stirring constantly until well browned (mince should be well cooked until no longer pink)
• Stir in remaining ingredients
• When boiling, reduce to low heat, cover and simmer (cooking gently at a level where tiny bubbles rise to the surface) for 20 minutes stirring occasionally
You will need:
100g diced lamb
1 cup chopped onions
1 clove garlic, crushed
5 medium dried apricot halves
1 cup chicken stock
20 ml orange juice
20 g raw flaked almonds
1 level tsp honey
1 tsp ground cinnamon
1 Tbsp olive oil
2 Tbsp chopped fresh mint
Method:
• Heat half the oil in a pan and cook lamb for 4 minutes or until lightly browned and remove
• Heat remaining oil in pan and cook onion, garlic and flaked almonds
• Return lamb to pan and add chicken stock, orange juice, honey and cinnamon
• Cook for 1 hour on low flame
• Add apricot halves and cook a further 5 minutes
• Stir through mint and serve
You will need:
1 pork lean steaks
¼ Tbsp olive oil
¼ onion, chopped
½ garlic clove, crushed
1 apples, peeled, cored and thinly sliced
¼ Tbsp soy sauce, light or dark
½ Tbsp white vinegar
¼ Tbsp brown sugar
¼ tsp ground coriander
¼ tsp cornflour
½ Tbsp water
Freshly ground black pepper, to taste
Method:
• Place steaks under hot grill and grill for about 5 - 6 minutes each side or until just cooked and golden
• Meanwhile, brush the base of a pan with olive oil and cook onion and garlic until light gold in colour
• Add the apples, soy sauce, vinegar, sugar, ground coriander and season to taste with pepper
• Cook on a medium heat, stirring until the apples are soft
• Mix cornflour with a little water to make a paste
• Add to apple sauce and cook, stirring, until thick
• Serve hot grilled pork steaks with sauce
