All of the recipes listed in the Meal Plans are displayed below. Unless otherwise stated, each recipe serves 1. Individual ingredients may be substituted for similar items or vegetarian options to suit individual taste or specific dietary preferences.
Kim Kardashian’s Meal Replacement Shakes
The shake powder should be blended with 200ml ice cold water. This can be done by hand, in a blender or with a shaker. The shake should be consumed immediately once mixed. Although this is the suggested way to blend the shakes, they are a versatile product and may be used in other ways as detailed below:
Additional calories should be taken into account when preparing the shakes in alternative ways.
You will need:
Handful rocket, rinsed and dried
¼ large orange, peel and white pith removed
¼ large fennel bulb
1 paper-thin slice red onion
4 black olives
1 tsp extra virgin olive oil
1 tsp fresh orange juice
½ tsp orange zest
Pinch salt and freshly ground black pepper, to taste
Method:
• Arrange rocket to make a bed on a salad plate
• Cut orange crosswise into thin slices and arrange over the rocket on the plate
• Cut away feathery tops of fennel at base of round stalks and discard
• Slice off bottom of bulb, remove tough outer layer of bulb and discard both
• Halve bulb vertically
• Using a very sharp knife cut each half crosswise into very thin slices and arrange some over orange slices
• Separate the onion slices into rings and arrange over fennel
• Add olives and sprinkle with salt and pepper to taste
• In small bowl, whisk oil with orange juice and zest
• Drizzle dressing over each salad, serve immediately
You will need:
3 small (20g) radish
1 Tbsp (10g) chopped shallots
1 Tbsp (20ml) lemon juice
1 fennel bulb (234g)
½ cup (10g) of rocket
Method:
• Finely chop the radish and shallots
• Pull the leaves from the fennel bulb and arrange on a plate
• Sprinkle with radish, shallots and rocket
• Top with a squeeze of lemon juice
You will need:
100g of lettuce, any type
½ cup (60g) sliced cucumber, unpeeled
10 strips (27g) of red pepper
10 (17g) cherry tomatoes
1 cup (110g) grated carrots
2 small (20g) radish
1 (12.5g) avocado
Squeeze of lemon (optional)
Method:
• Wash the lettuce
• Slice the cucumber
• Slice the cucumber
• Cut the pepper into strips
• Grate the carrot
• Slice the tomatoes if necessary
• Slice the radish
• Half the avocado, scoop out the flesh from one half and slice into thin strips
• Assemble all of the ingredients onto a plate
• Finish with a squeeze of lemon if desired
You will need:
½ cup rocket
¼ bag lettuce
6 cherry tomatoes
6 slices cucumber
Method:
• Rinse the rocket and lettuce, drain and place in a salad bowl
• Cut cherry tomatoes in half and add to the rocket and lettuce with the sliced cucumber
• Toss to combine and serve
You will need:
1 ½ cup (10g) of rocket
100g of lettuce, no dressing
8 (17g) cherry tomatoes
10 strips (27g) of red pepper
½ cup (60g) sliced cucumber, unpeeled
10 g of pine nuts
5 (2.5g) fresh basil leaves
Method:
• Slice the cucumber, pepper and tomato
• Place the lettuce on a plate
• Assemble the other salad ingredients on top of the lettuce
• Sprinkle with pine nuts and fresh basil
You will need:
10ml extra virgin olive oil
1 Tbsp (20ml) lemon juice
1 Tbsp (15ml) white wine vinegar
Method:
• Place the olive oil, vinegar and lemon juice in a jug and mix
You will need:
100g watermelon, (or any melon of your choice), seeds
removed and cut into wedges
40g pineapple flesh, cut into wedges
13g red onion rings
2 tsp crumbled walnuts
25g reduced-fat feta cheese, crumbled
20g red grapes
¼ cup watercress
Dressing
1 Tbsp freshly squeezed orange juice
¼ Tbsp raspberry vinegar (or balsamic vinegar)
½ Tbsp olive oil
½ Tbsp fresh mint leaves, shredded
Method:
• Place the melon in a large bowl, along with the onion, walnuts, feta, grapes and watercress
• Gently mix together the orange juice, vinegar, olive oil and shredded mint
• Pour over the salad and toss gently to combine and coat
